South Carolina Low Country Lobster Salad

Ingredients
- 4 cobs fresh corn
- 3 pounds red potatoes, quartered
- 1/2 pound smoked sausage, sliced
- 2 tablespoons old bay seasoning
- 1 teaspoon paprika
- salt and pepper
- 2 pounds cooked lobster meat
- 1/2 cup fresh lemon juice
- 1/3 cup olive oil
- 3 tablespoons dijon mustard
- 4 green onions, sliced
- 1 garlic clove, minced
- salt and pepper
Directions
- Bring a large pot of water to a boil, add old bay seasoning, paprika, potatoes, and sausage, and return to a boil.
- Cook for 10 minutes then add corn and return to a boil. Cook an additional 5 minutes or until potatoes are tender and the corn is cooked and then drain.
- Cut kernels from cobs and place them in a large bowl. Add in lemon juice, olive oil, mustard, green onions, and garlic and stir to combine.
- Fold in potatoes, sausage, and lobster meat and season with salt and pepper and additional old bay seasoning to taste.
