North West Montana Smoked Salmon Omelette
What's better than Salmon from the North West? How about Salmon for breakfast.

Ingredients
- 4 eggs
- 1 tablespoon creme fraiche
- salt and pepper
- 1/2 cup Pacific smoked salmon, chopped
- 2 tablespoons chives, chopped
- 3 tablespoons butter
Directions
- In a medium bowl, pool the eggs with the creme friache, chives, and salt and pepper and whisk to combine.
- Heat a nonstick pan over medium-high heat and add the butter. When the butter foams add the eggs.
- Cook the omelette, add smoked salmon into the center, and carefully fold.
- Serve hot with a side of fresh greens or potatoes.
