New York Pork Chops & Apple Sauce

Ingredients
- 4 Berkshire pork chops
- Salt and pepper
- 2 tablespoons oil
- 1 tart apple
- 2 sweet apples
- 1 small onion
- 1 teaspoon fresh sage, roughly chopped
- Salt and pepper
- 3 tablespoons oil
Directions
- Preheat a large skillet over high heat and add oil. Season both sides of chops with salt and pepper and place in the pan.
- Sear until golden for about 4-5 minutes, and flip. Cook another 3-4 minutes on the other side until an internal temperature reading of at least 140°F.
- Peel and cube the apples and onion. Preheat pan over medium-high heat and add oil. Add the apples and cook for 2-3 minutes, then add the rest of the ingredients.
- Cook, stirring occasionally until softened. Place in a food processor or bowl (if using a stick blender) and pulse until a chunky sauce is formed.
