Heidi's Meatballs & Sauce For a Crowd
These meatballs are great for a crowd, a couple of meals during the week, or freeze half for another meal later on. I've made this for my son's Robotics team and served from a slow cooker to keep them warm. It was a big hit.

Ingredients
For the meatballs:
- 3 pounds lean ground beef
- 1 pound ground pork
- 3 eggs
- 1 cup milk
- 2 cups seasoned breadcrumbs
- 1/2 cup grated parmesan cheese
- 1/2 cup freshly chopped parsley
- 2 tablespoons finely chopped garlic
- 1 onion finely minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
For the sauce:
- 3 cans of whole plum tomatoes (I like to use Muir Glen)
- 2 sticks of butter
- 3 onions cut in half
- 2 teaspoons of salt, plus more to taste
- Black pepper, to taste
- 2 tablespoon of oil olive for taste
Directions
For the meatballs:
- Mix meats together to get a good blend of the meats
- In another bowl, mix all of the other ingredients, then add to the meat mixture
- Let the mixture sit for at least 30 minutes
- Shape into 24 meatballs
- Place on a foil-lined pan and place in a 350-degree oven for 30 minutes
- After 30 minutes, place under the broiler to get a nice browned look
- Remove from the oven and remove any excess fat from meatballs
- Place meatballs in your pot already filled with your favorite sauce and let the flavors blend on a low simmer for about 30 minutes
For the sauce:
- Place the 3 cans of tomatoes, butter, and 3 onions (held together with a toothpick), and salt and pepper in the pan
- Simmer for about 1 hour, breaking up the tomatoes as they cook
- Remove the onions and discard
- Top off with olive oil and season with more salt as needed
